A Friday Family Lunch in Sardinia – Fregula con Arselle
Toasted Sardinian semolina pasta, fresh clams, cherry tomatoes, parsley and white wine, finished away from the heat with Gariga or Sandalia Limone olive oil.

A Friday family lunch in Sardinia calls for something fresh, simple and connected to the island. Fregula con arselle slowly absorbs the delicate clam broth, while Gariga or Sandalia Limone adds the final citrus aroma without covering the flavour of the seafood.
Ingredients — serves 4
- 300 g Sardinian fregula
- 1 kg fresh clams
- 200 g cherry tomatoes
- 2 garlic cloves
- 100 ml dry white wine
- 3 tablespoons extra virgin olive oil for cooking
- 4 teaspoons Gariga or Sandalia Limone olive oil for finishing
- A handful of finely chopped parsley
- A small pinch of chilli
- Optional: a small pinch of Sardinian saffron
- Salt and freshly ground black pepper
1. Purge and open the clams
Leave the clams in cold salted water for approximately two hours, then rinse thoroughly. Warm one tablespoon of extra virgin olive oil with one garlic clove in a large pan. Add the clams and white wine, cover and cook until the shells open. Set the clams aside, discard any that remain closed, and carefully strain and reserve their cooking liquid.
2. Build the base
Gently warm the remaining cooking oil with the second garlic clove and chilli. Add the cherry tomatoes and optional saffron, then cook until the tomatoes begin to soften.
3. Cook the fregula
Add the fregula and gradually pour in the filtered clam liquid, followed by a little hot water when necessary. Cook for 15–18 minutes, stirring occasionally, until tender with a slight bite. The finished dish should remain soft and gently brothy rather than dry.
4. Return the clams
Add the clams and parsley during the final minute. Stir carefully, remove the pan from the heat and taste before adding salt, as the clam liquid may already provide enough seasoning.
5. Finish with Gariga or Sandalia Limone
Divide the fregula between four warm bowls and finish each serving with approximately one teaspoon of Gariga or Sandalia Limone. Add it only after the dish has left the heat so its fresh lemon aroma and extra virgin olive oil character remain clear. Taste before adding any lemon juice—the Limone oil should provide the principal citrus note.

The gentle lemon character naturally complements shellfish, parsley and white wine. Used as a finishing oil, Gariga or Sandalia Limone brightens the dish without introducing the sharp acidity of lemon juice.
